Random Recipes: Coconut Banana, Choc Chip Cookie-Cakes. Vegan & Gluten Free

Have you ever fancied a cookie and a cake at the same time? Of course you have – well, I have. And yesterday I decided to do something about it!


The very kind people at Goodyfull sent me a pack of their Coconut Flour to whip up a recipe with, and I devised a cookie/cake combo! Looks like a cookie, has the texture of cake! What could be better? Here’s the – very simple, anyone can do it – recipe. Completely vegan and gluten free, as always!


4 heaped tablespoons of Goodyfull coconut flour

1 small (very ripe) banana (mashed)

Chocolate Chips (go mad or be sparing, the choice is yours)!

4 tablespoons Koko Coconut Milk

Pinch Himalayan Sea Salt

Pinch Baking Powder


Mash the banana, and mix with flour, baking powder and salt.

Add the milk, a small amount at a time, until the consistency is right – make sure it doesn’t get really runny.

Mix through however many chocolate chips you desire – this is where you can go crazy!

Using a large spoon, put blobs of dough onto a baking tray (lined with greaseproof paper) and flatten them out into cookie shapes.

Cook in an oven pre-heated to 180 degrees centigrade, for approximately 10 minutes.

Once cooled, they should hold their shape, but will crumble like cake and have a similar texture too. I found the coconut taste absolutely delicious, and it’s a bit like eating a banana cake with a bounty!
