Healthy Desserts… Chocolate Chia Seed Pudding

We all love a good pudding, right? The trouble is, so many of our favourite cakes and sweet treats are packed full of sugar. I’m a huge fan of raw cakes, especially “cheese”-cakes and so I thought I’d give a more creamy, pudding style dessert a bit of a go instead. I often have a chocolate-chia seed pudding in Le Pain Quotidien when we eat out, so when I was kindly sent a packet of chia seeds from Goodyfull to try out, I thought I’d have a try at making one myself!

Chia seeds are absolutely packed with protein, omega oils and iron. They also contain more than 5 times the amount of calcium than milk!

This is one of the easiest desserts to make, and very few ingredients are required. The test of patience is waiting overnight for the chia seeds to soak in the plant milk goodness!

ChiaSeeds

If I’m making enough just for one, I usually make it in a cup or mug, and then transfer to a bowl once it’s ready to eat.

Ingredients (Serves 2)

300ml Koko Coconut Milk (not tinned coconut milk)

50g Goodyfull Chia Seeds

2 Tablespoons Raw Cacao Powder

Generous squirt of Agave Syrup or Brown Rice Syrup (sweetness is a personal thing, so adjust to your taste)

Method

Combine ingredients into one large bowl.

Mix thoroughly – the cacao powder may go a little lumpy and look quite messy to start with, but don’t worry, you can give it all another stir in the morning and it will all be perfectly dissolved.

Simply pop into the fridge, and leave overnight (or make first thing in the morning and leave until the evening).

When ready to serve, the chia seeds should have soaked up the coconut milk and you’ll have something with a very similar texture to rice pudding. Give everything a good mix and divide into serving dishes.

You can experiment with the chia seed to plant milk ratio to get your favourite consistency – there are no rules, so make your own! This would also work with a variety of other plant milks and flavourings. It’s a really versatile recipe, so you can add vanilla and berries instead of cacao powder if you like! The choice is yours! Such an easy dessert, and one that’s actually good for you!
