As Autumn creeps up on us, it’s the season for hot chocolates, turmeric lattes and comforting puddings. Rice pudding is a classic favourite in our household, which stems from warm childhood memories of our mother’s creating the dessert. A simple yet warming dish.
Traditionally, spices such as cinnamon and nutmeg are used, and I’ve added a little twist to this classic dish, made vegan. I created a rich, tea infused coconut milk prior to creating the rice pudding, and it’s simply wonderful.
A Warm Hug from Leaves of the World, is an organic, sweet chai black tea blend with a difference. Cinnamon, ginger, liquorice and cardamom are combined with apple, pineapple and pear pieces. I made a rich cold brew with Koko dairy free milk to add an unusual twist to this classic pudding.
200g Organic pudding rice
800ml Koko dairy free milk
Generous squeeze of organic agave syrup
3 teaspoons Leaves of the World – “A Warm Hug” tea
Maple Syrup – to drizzle (optional)
Allow 12 hours to cold brew before you want to start making your rice pudding.
Pour your dairy free milk into the cold brew bottle (you can use a jug and strain out the leaves afterwards if you prefer).
Add 3 teaspoons of A Warm Hug.
Put into the fridge and allow to cold brew for 12 hours.
Transfer cold brew to a saucepan and bring to the boil.
Add in pudding rice, return to boil, then turn down and simmer (covered) for 15-20 minutes.
If the liquid is not all absorbed after this time, turn off the heat, cover and allow to sit for all of the liquid to be absorbed. The rice will become fluffier and softer.
Serve into bowls and drizzle with a little maple syrup if desired.
You may notice that I added some extra tea through my rice pudding when I was cooking it. I did this for an experimental touch of flavour. If you don’t like to eat tea leaves, this is entirely optional and purely decorative!
